Chocolate Sea Salt Granola

Homemade granola is one of the easiest things to make and is one of my favorite snacks! Have it with milk for breakfast, put it on yogurt or simply eat it alone. It’s versatile, delicious and is the perfect thing to take along for summer hikes or camping trips!


 

Chocolate Sea Salt Granola

Makes: 8 cups

Prep time: 10 mins

Bake time: 20 mins

Total time: 1 hour


Ingredients:

4 cups old fashioned oats

¼ tsp cinnamon

¼ cup cacao powder

2 Tbsp whole wheat flour

½ tsp sea salt, divided

⅓ cup almond butter

⅓ cup coconut oil, melted

½ cup honey

2 tsp vanilla extract

⅓ cup mini chocolate chips


Step 1:

Line 12x18” baking sheet with parchment paper, set aside. Preheat oven to 325* F.


Step 2:

Combine oats, cinnamon, cacao powder, flour and ¼ tsp sea salt in a large bowl and mix together with a wooden spoon or rubber spatula.


Step 3:

Add almond butter, melted coconut oil, honey and vanilla to the oat mixture and mix well until fully incorporated.


Step 4:

Dump granola onto a parchment lined baking sheet and spread out evenly. Firmly press down granola into the baking sheet with the back of a wooden spoon or rubber spatula.


Step 5:

Place the baking sheet in the oven on the 2nd from the bottom rack and bake for 18-20 minutes. Check during the last few minutes to make sure granola doesn’t burn.


Step 6:

After baking, immediately sprinkle mini chocolate chips and the remaining ¼ tsp sea salt onto granola and let the granola cool on the baking sheet for about 30 mins.


Step 7:

Once the granola is cooled, break apart into chunks with your fingers and store in an airtight container at room temperature.


*Variations:

-add ¼ - ⅓ cup coconut sugar for sweeter taste

-use peanut butter instead of almond butter

-add ½-1 cup coconut or your favorite nut

-use maple syrup instead of honey
