These chewy sugar cookie bars full of happy sprinkles frosted with the prettiest pink strawberry buttercream are sure to put a smile on your face! I mean, what’s not to love about this combo? Sugar cookies are such a classic treat and I just couldn’t resist turning them into bar form and loading them up with sprinkles! As for the buttercream, the natural pink color from the freeze dried strawberries is just perfect and compliments the flavor of the cookie bars in a delicious way. These funfetti cookie bars are super chewy just like the soft center of your favorite cookie - that is if you’re a soft and chewy cookie kind of person! ;) This recipe comes together so easily and is perfect for any kind of celebration- even if that celebration is simply celebrating another day of life! Funfetti Sugar Cookie Bars with Strawberry Buttercream

Makes: 16 squares
Ingredients:
For cookie bars:
1 egg, at room temperature
1 egg yolk, at room temperature
1 cup sugar
½ cup butter, softened
½ tsp baking soda
½ Tbsp cornstarch
1 Tbsp vanilla
1 ½ cups flour
¼ cup rainbow sprinkles (plus more for decorating, if desired)
For buttercream:
⅓ cup butter, softened
½ Tbsp vanilla
4-5 Tbsp heavy whipping cream
3 cups powdered sugar
⅓ cup finely ground freeze dried strawberries
Step 1:
Preheat the oven to 350* F and line an 8x8 baking pan with parchment paper using clips on the sides to hold the paper in place, set aside.
Step 2:
In a large bowl add the egg, egg yolk, sugar and butter and beat until well combined with an electric hand mixer or with the paddle attachment in a stand mixer.
Step 3:
Add baking soda, cornstarch, vanilla and flour to the ingredients in the bowl and beat again until combined. Lastly, add in the sprinkles and lightly fold in with a rubber spatula until combined.
Step 4:
Use a rubber spatula to scoop and spread out the cookie dough into the lined baking pan. The dough is a little sticky and can be tricky to spread so just do your best to spread it as evenly as possible. Once the dough is evenly spread, remove the clips from the sides of the pan and if desired, add a few more sprinkles to the top of the dough before baking. Place in the oven to bake for 20-22 minutes at 350* F. Once baked, remove from the oven and place the pan on a cooling rack to cool.
Step 5:
While the funfetti cookie bars are cooling, prepare the strawberry buttercream. In a medium sized bowl add the butter, vanilla, half of the powdered sugar and the ground strawberries. Beat together using an electric hand mixer or in the bowl of a stand mixer with the whisk attachment until combined. Once combined, add some of the heavy whipping cream and beat until the frosting starts to become soft and fluffy. Alternately add the remaining powdered sugar and heavy whipping cream until your buttercream reaches the texture you desire. (Feel free to add more or less powdered sugar/heavy whipping cream if desired in order to reach the texture you like.)
Step 6:
Once the funfetti cookie bars have fully cooled, frost with the strawberry buttercream using a knife or icing spatula and decorate with extra sprinkles if desired. Cut into 16 squares and enjoy! Store at room temperature in an airtight container for several days (if they last that long!).
