Prep Time: 20 minutes

Bake Time: 28 minutes

Makes: 8x8 cake

Ingredients:

For streusel:

4 TB butter, softened and cubed

3/4 cup brown sugar, packed

1/4 cup flour

1 TB cinnamon

1/2 TB vanilla extract

1/3 cup old fashioned oats

For cake:

6 TB butter, melted

1/2 cup sugar

1/2 cup brown sugar

1 large egg, at room temperature

1/2 TB vanilla extract

3/4 cup pumpkin puree

1 1/4 cups flour

1 1/4 tsp baking powder

1/4 tsp salt

1/2 tsp cinnamon

1/2 TB pumpkin pie spice

Step 1:

Line an 8x8 baking pan with parchment paper and set aside. Preheat the oven to 350* F. First, melt the 6 TB of butter for the cake in a microwave safe container and set aside to cool. Next, prepare the streusel in a medium sized bowl by adding all of the ingredients and combining them with a pastry cutter or your hands until pea sized clumps form, set aside.

Step 2:

For the cake, add the sugars, egg, vanilla, pumpkin and the cooled melted butter to a large bowl and beat with an electric hand mixer until fully combined.

Step 3:

Mix together the flour, baking powder, salt, cinnamon and pumpkin pie spice in a small bowl. Once combined, add the flour mixture to the wet ingredients in the large bowl and slowly mix together until just combined- be careful not to over-mix.

Step 4:

Carefully add the cake batter to the lined 8x8 baking pan and use a rubber spatula to spread it around evenly. Use your hands to squeeze the streusel to form clumps then evenly sprinkle the pieces over the top of the batter.

Step 5:

Bake for 28-30 minutes at 350* F on the middle oven rack. To make sure the cake is fully baked, insert a toothpick into the center, and if it comes out clean, it is done. Remove the coffee cake from the oven and place on a cooling rack to cool a bit before serving.

Step 6:

Keep the Pumpkin Spice Coffee Cake tightly covered or in an airtight container at room temperature to keep fresh for several days. Enjoy!
