When a serious chocolate craving hits, these cookies will save the day! Made with a mixture of black and regular cocoa plus dark chocolate chips, these cookies are seriously satisfying! Black cocoa is what gives these cookies a beautifully deep dark color and intense chocolate flavor like that found in an Oreo cookie. Not only are they super chocolatey and soft, but these cookies come together quickly so you don't have to wait long to get your chocolate fix!
Double Dark Chocolate Chip Cookies

Makes: 30 cookies
Ingredients:
1 egg
1 egg yolk
½ cup brown sugar, packed
⅓ cup sugar
½ cup butter, softened
1 tsp baking powder
½ Tbsp vanilla
1 cup flour
¼ cup regular cocoa powder, sifted
¼ cup black cocoa, sifted
½ Tbsp cornstarch
1 ¼ cup dark chocolate chips, divided
Step 1:
Preheat oven to 350* F. Line a baking sheet with parchment paper or a silicone baking mat, set aside.
Step 2:
In a large bowl, combine egg, egg yolk, sugars and butter and mix with an electric hand mixer or in the bowl of a stand mixer with the paddle attachment until fully combined.
Step 3:
Add baking powder, vanilla, flour, cocoa powders and cornstarch to the bowl and mix well until fully incorporated.
Step 4:
Add ¾ cup of the chocolate chips and mix into the dough using a rubber spatula until evenly incorporated.
Step 5:
Scoop cookie dough using a regular sized cookie scoop and place on the prepared baking sheet a couple inches apart. Gently press a few of the remaining chocolate chips into the top of each dough ball. Bake for 8-9 minutes.
Step 6:
Remove from the oven let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack. Store cookies in an airtight container to stay fresh for several days. Enjoy!
Notes:
*Black cocoa is not in most stores, but I was able to find it easily on Amazon.
*To get melty chocolate pools, I like to use Ghirardelli 60% cacao chocolate chips and use a spoon to gently spread out the chocolate on the tops of the cookies immediately after they come out of the oven.
