What’s super soft, full of melty chocolate and topped with toasty marshmallow you ask?... these S’mores Cookies! If you know me, you know I love anything and everything s’mores flavor and these cookies are no exception!
This recipe is basically another version of my S’mores Skillet Cookie (if you haven’t made it yet, it’s a must bake!) but instead of one large skillet cookie I’ve made some slight changes for regular sized cookies- yippee! So grab those marshmallows, chocolate chips and graham crackers and let‘s bake some soft and tasty S’mores Cookies!
S’mores Cookies

Ingredients:
1 egg
1 egg yolk
3/4 cup + 2 Tbsp brown sugar, packed
½ cup butter, softened
½ tsp baking soda
1 Tbsp vanilla
1 ½ cups flour
½ Tbsp cornstarch
1 cup chocolate chips, divided
3 graham crackers, coarsely crushed
~30 large marshmallows
Step 1:
Line a baking sheet with parchment paper or a silicone baking mat, set aside.
Step 2:
In a large bowl, combine egg, egg yolk, brown sugar and butter and beat together using an electric hand mixer until fully combined.
Step 3:
Next, add baking soda, vanilla, flour and cornstarch and mix well until fully incorporated.
Step 4:
Add ¾ cup of the chocolate chips and the coarsely crushed graham cracker pieces into the bowl and mix into the dough with a rubber spatula until evenly incorporated. Chill in the fridge for at least 30 mins.
Step 5:
Preheat oven to 350* F. Scoop chilled cookie dough with a regular sized cookie scoop and place on the prepared baking sheet a couple inches apart. Put a few of the remaining chocolate chips onto the top of each dough ball. The total bake time for the cookies is 8-9 minutes, but during the last 5 minutes of baking add a large marshmallow to the top center of each cookie.
Step 6:
Once baked, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack. Store cookies in an airtight container to stay fresh for several days. Enjoy!
