S'mores Crispy Rice Treats

S'mores have got to be one of the best when it comes to simple desserts. I love the combo of gooey marshmallow, melty chocolate and crunchy graham cracker! Making s'mores around a campfire while camping is one of my favorite activities, but since a campfire isn't something I regularly get to enjoy at home that doesn't mean I have to miss out on tasty s'more treats! These S'mores Crispy Rice Treats are a great way to enjoy classic s'more flavor and only require minimal baking/cooking time! You won’t be disappointed in this gourmet treat that comes together without a fuss and doesn’t skimp on any of the gooey marshmallow, melty chocolate or graham cracker s’more goodness!


 

S’mores Crispy Rice Treats

Prep time: 10 minutes

Bake time: 5 minutes

Cool time: 45 minutes

Makes: 9 x 13 pan size or 24 cut squares


Ingredients:


For crust:

18 graham crackers, finely crushed

⅓ c sugar

¾ c butter, melted


Chocolate layer:

1 ½ c chocolate chips

½ tsp coconut oil


Crispy Rice layer:

¼ c butter

6 c mini marshmallows, divided

1 tsp vanilla extract

5 c crisp rice cereal


Step 1:

Preheat oven to 350* F. Line a 9x13 baking pan with parchment paper, set aside. In a large bowl mix together finely crushed graham crackers crumbs, sugar & melted butter until fully combined. Firmly and evenly press the crust mixture onto the bottom of the lined baking pan. (Tip: use the bottom of a flat measuring cup to press the crust onto the pan to help make it compact and even.) Once the crust is in place, bake in the oven for 5 minutes. After baking, set aside to cool.

 

Step 2:

To help the recipe come together smoothly, prepare the ingredients for the crispy rice layer by separately measuring out the ingredients and set them aside. Next, prepare the chocolate layer by adding the chocolate chips and coconut oil to a microwave safe bowl. Melt the chocolate mixture in the microwave for 20 second intervals, stirring the chocolate between each interval until it is fully melted. Once melted, pour the chocolate onto the graham crust and gently smooth it around evenly until the crust is completely covered, set aside.

 

Step 3:

Next, separate and set aside 1 cup of the mini marshmallows for the crispy rice layer. In a large saucepan, add the butter and the remaining 5 cups of marshmallows and melt over low/medium heat on the stovetop. Stir frequently to prevent the ingredients from burning. Once melted, remove the pan from the heat and add the vanilla, crispy rice cereal and remaining marshmallows and stir together until fully combined. Once combined, pour the crispy rice mixture over the chocolate layer in the baking pan and spread out as evenly as possible. Press the crispy rice mixture evenly onto the chocolate layer. (Tip: use the inside of a butter wrapper to press the crispy rice layer on to prevent it from sticking on your hands.) If desired, top the S’mores Crispy Rice Treats with extra graham cracker crumbs and mini chocolate chips. Once the chocolate layer is fully set (about 45 minutes), use the parchment paper to lift the crispy rice treats out of the pan for easy cutting. Use a sharp knife to cut into 24 squares then serve and enjoy!

*Storing tips:

Store crispy rice treats in an airtight container OR for best results, once cut into squares wrap each crispy rice treat individually in plastic wrap to keep fresh for several days.
